Barista oat milk for coffee: build your own recipe
A breakfast oat drink and an oat drink for a flat white ask different things of the same ingredients. Coffee adds heat, acidity and a demanding test of texture.
Start with a consistent oat base
Keep the oat concentration, starch treatment and finishing steps constant when comparing coffee recipes. A thinner drink is not automatically a better foaming drink. Test each batch using the same coffee, steaming method and cup size, and record how it pours and separates.
What protein glutaminase does
OatCraft Home Barista contains protein glutaminase alone. It modifies protein-bound glutamine without cutting the protein backbone. This offers a route to explore protein solubility and functionality. It does not add protein or guarantee café-style foam. The professional OatCraft Barista blend is a different product containing both protein glutaminase and neutral protease.
Keep the protein tools separate
Silk is neutral protease. It cuts proteins into smaller peptides. Controlled treatment can alter texture and solubility, but excessive hydrolysis may impair foam or affect flavour. Separate bottles allow you to compare protein glutaminase alone, protease alone and a combined process rather than treating every batch identically.
Make a fair foam comparison
Compare an untreated control with your trial recipe. Use the same beverage and coffee temperature, steam technique and waiting time. Note foam volume, drainage, bubble texture, bitterness and separation. Follow the formulation’s temperature, dose, time and finishing guidance; adding enzyme at the last moment to a finished coffee is not the intended process.
