Protein glutaminase modifies protein side chains without cutting the protein backbone. Published research supports exploring it for plant-drink functionality; results depend on the oat base and process.
OatCraft’s home recipe will need its own foam trials. This is an ingredient added during preparation, with compatible conditions—not a last-minute drop in finished coffee.

Measure liquid additions with the pipette’s mL markings. Do not convert these quantities into drops without calibrating your dropper.

THE REFILL RITUAL
Start with a 30 mL dropper bottle. Reorder a 100 mL refill for home, or a 500 mL refill for your café. Measure doses with the graduated pipette in millilitres. Drop size varies; use the mL markings rather than counting drops.
At the illustrative dose, a 30 mL bottle lasts about 14 weeks.

A FEW GOOD QUESTIONS
Simple questions deserve clear answers.
No. Choose one amylase route to prepare your base. Sweet is an optional sweetness step. Barista and Silk are separate protein tools for suitable recipes. The everyday pair is a simple starting point for trials.
Use the graduated glass pipette to measure the mL quantity shown in your recipe. A drop is not a fixed unit: the liquid and dropper change its volume. Measure repeated pipette additions if needed; use a suitable graduated measure for larger café batches.
Barista is intended for the preparation of your oat base, with the temperature, dose and time specified in the matching recipe. The name doesn’t mean instant foam: oat composition, processing and steaming technique all affect results.
Protein glutaminase modifies protein-bound glutamine. Protease cuts protein into smaller peptides. Both can change functionality, but protease treatment needs careful control: excessive hydrolysis may reduce foam stability or change flavour.
No. Enzymes change processing characteristics; they don’t supply the calcium, vitamins or other nutrients added to some commercial drinks. Your final recipe determines its nutritional composition.
